1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

For the Yogurt Mixture:

2 cups Greek yogurt (plain or flavored)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

For the Cookie Crust:

1 1/2 cups graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/3 cup unsalted butter, melted

1/4 cup granulated sugar

For the Topping:

Whipped cream (optional)

Chocolate shavings (optional)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Cherry Filling:

    - In a medium saucepan set over medium heat, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until the mixture begins to bubble and thicken, which should take about 5-7 minutes.

      - Once the filling has thickened, remove it from the heat and allow it to cool completely.

        Make the Yogurt Mixture:

          - In a large bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt until the mixture is smooth and well-blended. Taste and adjust sweetness to your liking.

            Prepare the Cookie Crust:

              - Preheat your oven to 350°F (175°C).

                - In a mixing bowl, combine the graham cracker crumbs, cocoa powder, melted unsalted butter, and granulated sugar. Mix until all crumbs are evenly coated and moistened.

                  - Transfer the crumb mixture to a 9-inch pie dish or two mini pie tins, pressing it down firmly to form an even crust.

                    - Bake the crust in the preheated oven for 8-10 minutes, or until it is slightly golden. Remove from the oven and allow it to cool completely.

                      Assemble the Pie Coins:

                                  Serve:

                                    - Once frozen, remove your frozen pie coins from the freezer and let them sit at room temperature for a few minutes to soften slightly for easier serving.
