Begin by gathering your dry ingredients: rolled oats, whole wheat flour, baking powder, cinnamon, and salt. In a large mixing bowl, combine the rolled oats and whole wheat flour. The oats provide a chewy texture, while the flour helps bind everything together. Next, add the baking powder and cinnamon. The baking powder will give your cookie base a slight lift, while the cinnamon adds that warm, comforting flavor that pairs beautifully with oats.

Ingredients

For the Cookie Base:

1 ½ cups rolled oats

1 cup whole wheat flour

½ cup brown sugar, packed

1 tsp ground cinnamon

½ tsp baking powder

¼ tsp salt

½ cup coconut oil, melted (or unsalted butter for a richer flavor)

1 large egg

1 tsp vanilla extract

½ cup chopped nuts (such as walnuts or pecans, optional)

For the Frozen Yogurt Layer:

2 cups plain Greek yogurt (or flavored variants like vanilla or honey for an extra twist)

¼ cup honey or maple syrup (depending on your sweetness preference)

1 tsp vanilla extract

½ tsp ground cinnamon

¼ cup mini chocolate chips (optional, for added sweetness and texture)

Optional Topping:

A light sprinkle of cinnamon sugar for added flavor

A drizzle of chocolate or caramel sauce for extra indulgence

Instructions

Prepare the Cookie Base:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, thoroughly combine the rolled oats, whole wheat flour, packed brown sugar, ground cinnamon, baking powder, and salt.

        - In a separate bowl, whisk together the melted coconut oil (or butter), egg, and vanilla extract until the mixture is smooth and well blended.

          - Pour the wet mixture into the dry ingredients and stir together until a thick and cohesive dough forms. If desired, gently fold in the chopped nuts for added crunch.

            - Transfer the dough into a greased or parchment-lined 8x8 inch baking dish. Use a spatula to press the dough down evenly across the bottom of the dish.

              Bake the Cookie Base:

                - Place the baking dish in the preheated oven and bake for 15-18 minutes, or until the edges turn a light golden brown. Once baked, remove from the oven and allow the cookie base to cool completely in the pan.

                  Prepare the Frozen Yogurt Layer:

                    - In a medium bowl, mix together the plain Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon until the mixture is smooth and uniform. If desired, gently fold in the mini chocolate chips for a little extra sweetness.

                      Assemble the Bars:

                        - Once the cookie base has cooled, spread the yogurt mixture evenly over the top of the cookie layer.

                          - For an added touch of flavor and texture, optionally sprinkle cinnamon sugar over the yogurt layer.

                            - Cover the dish with plastic wrap and place it in the freezer for at least 4-6 hours, or until the yogurt layer is completely solid.

                              Slice and Serve:

                                - When ready to serve, remove the dish from the freezer and let it sit at room temperature for a few minutes to make slicing easier.

                                  - Cut the chilled dessert into bars of your desired size. For an indulgent finishing touch, drizzle chocolate or caramel sauce over each bar before serving. Enjoy your deliciously chewy and creamy treat!
