2 cups plain Greek yogurt

1/2 cup brewed espresso, cooled to room temperature

1/4 cup maple syrup (or substitute with honey for a different flavor profile)

1 teaspoon pure vanilla extract

1/2 cup mini chocolate chips

1/4 cup unsweetened cocoa powder

1/4 teaspoon fine sea salt

Optional: whipped cream and chocolate drizzle for serving

Instructions
 

In a large mixing bowl, combine the Greek yogurt, cooled espresso, maple syrup (or honey), vanilla extract, cocoa powder, and sea salt. Using a whisk, stir vigorously until the mixture is completely smooth and all ingredients are well-incorporated.

    Gently fold in the mini chocolate chips with a spatula, making sure they are evenly distributed throughout the yogurt mixture without breaking them.

      Carefully pour the yogurt mixture into silicone ice pop molds or ice cube trays, filling each mold nearly to the top. If you opt for ice cube trays, place toothpicks in the center of each cube to create easier handles for later.

        To eliminate any air bubbles, tap the filled molds gently against the counter. This helps the mixture settle evenly and minimizes ice crystals.

          Cover the molds with plastic wrap or their provided lids to shield your treats from any freezer odors that could alter their flavor.

            Freeze the filled molds for a minimum of 4-6 hours, or until they are completely solid throughout.

              When ready to serve, run the molds briefly under warm water for a few seconds to help release the mocha chip sticks. Gently pull them out and enjoy immediately. For an added touch, swirl some whipped cream on top and drizzle with chocolate sauce before serving!
