Frozen Yogurt Pumpkin Pecan Squares

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

1/2 teaspoon ground cinnamon

For the filling:

1 cup pumpkin puree (either canned or homemade)

2 cups plain Greek yogurt

3/4 cup pure maple syrup

1 teaspoon pure vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon fine salt

For the topping:

1/2 cup pecans, chopped

1/4 cup caramel sauce (optional for drizzling)

Whipped cream (optional for serving)

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and ground cinnamon. Stir until the mixture is thoroughly combined and resembles wet sand. Press this mixture evenly into the bottom of an 8x8-inch (20x20 cm) baking dish, ensuring it’s compact and level. Bake in the preheated oven for 8-10 minutes, or until the crust is lightly golden. Once done, remove from the oven and allow it to cool completely in the dish.

    Make the filling: In a large mixing bowl, whisk together the pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and salt. Continue whisking until the mixture is completely smooth and well combined, with no lumps remaining.

      Layer the filling: After the crust has cooled to room temperature, carefully pour the creamy pumpkin yogurt filling over the crust. Use a spatula to spread it evenly across the surface, smoothing the top for a neat finish.

        Freeze: Cover the dish tightly with plastic wrap or aluminum foil and place it in the freezer. Allow it to freeze for at least 4 hours, or until the filling is firm and set.

          Prepare the topping: While the pumpkin squares are freezing, place the chopped pecans in a dry skillet over medium heat. Toast for about 3-5 minutes, stirring frequently until they become fragrant and slightly golden. Once toasted, remove from the heat and allow them to cool.

            Serve: When the squares are fully frozen, take them out of the freezer and let them sit at room temperature for 5-10 minutes to soften slightly for easier slicing. Cut into 9 squares. Just before serving, sprinkle the toasted pecans over the top and drizzle with caramel sauce if desired. Serve with a dollop of whipped cream for an extra touch of indulgence.
