Ingredients

For the Pumpkin Layer:

1 ½ cups pumpkin puree (fresh or canned)

1 cup plain Greek yogurt

½ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

For the Yogurt Layer:

2 cups plain Greek yogurt

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

For the Crust:

1 cup graham cracker crumbs

¼ cup melted coconut oil or unsalted butter

2 tablespoons sugar (optional)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted coconut oil (or unsalted butter), and sugar (if using). Stir the mixture until the crumbs are evenly coated and have a texture similar to wet sand. Firmly press this mixture into the bottom of an 8x8 inch baking dish lined with parchment paper. Place the dish in the freezer to allow the crust to set while you prepare the filling layers.

Make the Pumpkin Layer: In a large bowl, whisk together the pumpkin puree, Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, nutmeg, ginger, and salt. Mix until the mixture is smooth and creamy. Taste and adjust the sweetness to your liking.

Make the Yogurt Layer: In another bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed. Taste the mixture and adjust the sweetness, if necessary.

Layer the Mixtures: Remove the crust from the freezer. Pour half of the pumpkin mixture evenly over the crust. Spread half of the yogurt mixture over the pumpkin layer, smoothing it out. Repeat this process with the remaining pumpkin and yogurt mixtures. Use a knife or spatula to gently swirl the top layers together for a marbled effect.

Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil. Freeze for a minimum of 4-6 hours, or until the dessert is fully set and firm.

Slice and Serve: Once set, take the dessert from the freezer and let it sit at room temperature for 5-10 minutes to soften slightly, making it easier to slice. Cut into squares or slices and serve immediately. For an extra treat, drizzle with caramel sauce or add a dollop of whipped cream on top.

Store Leftovers: If you have leftovers, make sure they are covered and stored in the freezer, where they will keep for up to 2 weeks. Before serving, allow the slices to soften slightly at room temperature.

Prep Time, Total Time, Servings: 20 minutes | 6 hours | 9-12 slices

Optional Presentation Tips: For added flair, serve the slices on a decorative platter, garnished with a sprinkle of cinnamon or a few pumpkin seeds for crunch.
