Garlic Butter Chicken Pasta Jars

2 cups rotini pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs, diced

4 cloves garlic, minced

1 teaspoon red pepper flakes (or adjust to your preferred level of heat)

1 teaspoon mixed dried Italian herbs (such as basil, oregano, and thyme)

1/2 cup unsalted butter

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta thoroughly and set aside for later.

    Sauté the Chicken: In a large skillet set over medium heat, pour in the olive oil. Once heated, add the diced chicken thighs to the skillet. Season with salt, black pepper, and mixed dried Italian herbs. Sauté for about 6-8 minutes, or until the chicken is browned and fully cooked. Once done, remove the chicken from the skillet and keep it warm on a plate.

      Prepare the Garlic Butter: In the same skillet, reduce the heat to low. Add the minced garlic and red pepper flakes to the skillet. Sauté for approximately 1 minute, or until fragrant but not browned. Next, add the unsalted butter and let it melt, stirring well to combine it with the garlic.

        Combine Ingredients: Return the cooked chicken to the skillet, and then add the halved cherry tomatoes and chopped spinach. Stir everything together and cook for 2-3 minutes, or until the spinach wilts and the tomatoes become slightly tender.

              Serve: The assembled jars can be stored in the refrigerator for up to 4 days. When ready to eat, remove the lid and microwave the jar for 1-2 minutes, or until it's fully heated. Before serving, sprinkle with freshly chopped parsley for an added touch of freshness.
