Ingredients

2 boneless, skinless chicken breasts, sliced into thin strips

8 oz (225g) egg noodles

2 cups mushrooms, sliced (cremini or button mushrooms work beautifully)

4 cloves garlic, minced

4 tbsp unsalted butter, divided

2 tbsp olive oil

1 cup chicken broth

1 tbsp soy sauce

1 tsp dried thyme

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

¼ cup freshly grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Once done, drain the noodles and set them aside.

Sauté the Chicken: In a large skillet over medium-high heat, pour in 2 tablespoons of olive oil. Season the sliced chicken breasts generously with salt and pepper. Add the chicken to the skillet and sauté for about 5-7 minutes, stirring occasionally, until the pieces are browned and fully cooked. Once cooked, remove the chicken from the skillet and set it aside on a plate.

Sauté the Mushrooms: Using the same skillet, reduce the heat to medium and melt 2 tablespoons of butter. Add the sliced mushrooms and sauté for approximately 4-5 minutes, or until they are golden brown and tender. Next, add the minced garlic and continue to cook for an additional 1-2 minutes until the garlic is fragrant.

Combine Ingredients: Pour the chicken broth into the skillet, followed by the soy sauce, dried thyme, and oregano. Stir everything together and bring the mixture to a gentle simmer, scraping any browned bits from the bottom of the skillet for an extra depth of flavor.

Mix Everything: Return the sautéed chicken to the skillet along with the drained noodles. Toss all the ingredients together thoroughly to ensure the noodles are well-coated in the garlic butter sauce. Allow to cook for about 2-3 minutes, letting the flavors meld beautifully.

Final Touches: Turn off the heat and stir in the remaining 2 tablespoons of butter. If desired, sprinkle in the freshly grated Parmesan cheese and mix until melted. Taste the dish and adjust seasoning with additional salt and pepper as needed.

Serve: Carefully transfer the Garlic Butter Mushroom Chicken Noodles onto serving plates. Garnish with a sprinkle of freshly chopped parsley for a burst of color and freshness. Enjoy your delicious, flavorful meal!
