Ingredients

1 (4-5 lb) bone-in turkey breast, fully thawed

1/4 cup extra virgin olive oil

6 cloves of garlic, finely minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon lemon zest (from about 1 lemon)

1 tablespoon Dijon mustard

1 teaspoon kosher salt

1 teaspoon freshly cracked black pepper

1/2 teaspoon smoked paprika

1 cup low-sodium chicken broth

Optional: Fresh herbs (such as rosemary, thyme, or parsley) for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure even cooking.

Prepare the Herb Mixture: In a small mixing bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon zest, Dijon mustard, kosher salt, black pepper, and smoked paprika. Use a fork or a whisk to mix these ingredients thoroughly until they form a cohesive paste.

Prep the Turkey: Use paper towels to pat the turkey breast dry, ensuring the skin is as dry as possible. Carefully loosen the skin from the meat with your fingers, creating pockets on both sides of the breast. This allows for better flavor infusion.

Season the Turkey: Taking half of the prepared herb mixture, gently rub it beneath the skin of the turkey, spreading it evenly across the meat. Use the remaining herb mixture to thoroughly coat the outside of the turkey breast, making sure to cover all surfaces for maximum flavor.

Roast the Turkey: Transfer the seasoned turkey breast, skin-side up, onto a roasting rack set in a baking pan. Pour the chicken broth into the pan around the turkey, ensuring you do not pour it directly over the turkey. This will help keep the meat moist as it cooks.

Bake: Place the pan in the preheated oven and roast for approximately 1.5 to 2 hours. Check the internal temperature using a meat thermometer; it should reach 165°F (74°C) in the thickest part of the breast. To help retain moisture and infuse flavor, baste the turkey with the pan juices every 30 minutes.

Rest the Turkey: Once the turkey is fully cooked, remove it from the oven and allow it to rest on a cutting board or platter for 15-20 minutes. This resting period is crucial as it lets the juices redistribute, resulting in tender meat.

Serve: After resting, slice the turkey breast against the grain into thick pieces and serve warm. Garnish with fresh herbs if desired, and pair with your choice of sides for a delightful and complete meal.
