Ingredients

1 lb (450g) fresh asparagus, trimmed

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 large lemon, using a microplane grater

Juice of 1 large lemon

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

¼ teaspoon red pepper flakes (optional for extra heat)

2 tablespoons freshly grated Parmesan cheese (optional for added richness)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot and ready for roasting.

Prepare the Asparagus: Rinse the asparagus spears thoroughly under cold water to remove any dirt. Snap or cut off the tough woody ends of each stalk to ensure a tender bite.

Make the Garlic Lemon Mixture: In a small mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, sea salt, black pepper, and red pepper flakes (if desired). Whisk this mixture together until well combined, allowing the flavors to meld.

Coat the Asparagus: Place the trimmed asparagus in a large mixing bowl. Pour the garlic lemon mixture over the asparagus, ensuring all the spears are generously coated. Toss gently but thoroughly so that the garlic and lemon flavors coat each stalk evenly.

Spread on Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup or lightly grease it with a small amount of olive oil. Arrange the coated asparagus in a single layer on the baking sheet, making sure the spears are not overcrowded for optimal roasting.

Roast the Asparagus: Place the baking sheet in the preheated oven. Roast the asparagus for 12 to 15 minutes, or until the stalks are tender yet still have a slight crispness, based on your texture preference.

Add Cheese: For an irresistible finish, sprinkle the grated Parmesan cheese over the asparagus during the last 2 minutes of roasting. This will allow the cheese to melt and become beautifully golden without burning.

Serve: Once roasted, remove the asparagus from the oven and serve immediately while hot. This dish makes a wonderful side or can be tossed into a fresh salad for an added flavor punch!
