Ingredients

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

8 ounces elbow macaroni or any pasta of your choice

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

¼ teaspoon cayenne pepper (optional, for added heat)

Fresh parsley, finely chopped, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This will create the perfect environment for roasting the cauliflower.

Prepare the Cauliflower: On a large baking sheet, combine the cauliflower florets with olive oil, garlic powder, smoked paprika, and a generous pinch of salt and pepper. Toss until the florets are evenly coated. Spread them out in a single layer to ensure even roasting. Place in the preheated oven and roast for approximately 25-30 minutes, or until golden brown and tender, stirring halfway through for even cooking.

Cook the Pasta: While the cauliflower roasts, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Once cooked, drain the pasta and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour, whisking continuously for 1-2 minutes until the mixture turns a light golden color. Gradually pour in the whole milk while whisking to avoid lumps. Keep stirring until the sauce thickens, which should take about 5-7 minutes.

Incorporate Cheese and Flavor: Once your sauce has thickened, reduce the heat to low. Stir in the Dijon mustard and cayenne pepper (if using) for a flavor boost. Gradually add in the shredded cheddar, mozzarella, and grated Parmesan cheeses, mixing until the cheese has completely melted and the sauce is creamy.

Combine Pasta and Roasted Cauliflower: Carefully add the drained pasta and the beautifully roasted cauliflower to the cheese sauce. Gently stir to ensure that all the pasta and cauliflower are well-coated in the creamy mixture.

Transfer to Baking Dish: Pour the mac and cheese mixture into a greased 9x13 inch baking dish. If you desire an extra cheesy topping, sprinkle additional cheese over the surface. Bake in the oven for 15-20 minutes, or until bubbling and golden on top.

Garnish and Serve: Remove the dish from the oven and allow it to rest for a few minutes for easier serving. Before serving, sprinkle with fresh chopped parsley for a touch of color and freshness. Serve this delightful dish warm.
