Ingredients

12 large pasta shells

1 cup green chili sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro, for garnish

Olive oil, for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the large pasta shells and cook according to the package directions until they are al dente. After cooking, drain the pasta shells and rinse them under cold water. This step halts the cooking process. Set aside to cool.

Prepare the Filling: In a spacious mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, chopped spinach, garlic powder, onion powder, ground cumin, salt, and black pepper. Stir thoroughly until all ingredients are well blended and the mixture is creamy.

Stuff the Shells: Using a spoon, take the ricotta-cheese mixture and generously fill each pasta shell. Make sure to pack them well for a satisfying bite.

Assemble the Dish: Spread half of the green chili sauce evenly across the bottom of a baking dish. Place the stuffed pasta shells in a single layer on top of the sauce. Pour the remaining green chili sauce over the shells, ensuring they are fully covered to keep them moist during baking.

Add Cheese Topping: Sprinkle the remaining shredded mozzarella over the pasta shells, creating a cheesy crust on top.

Bake: Cover your baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and beginning to turn golden.

Garnish and Serve: Once baked, take the dish out of the oven and allow it to rest for a few minutes. Drizzle a touch of olive oil on top for extra flavor and garnish with fresh cilantro. Serve warm and savor the spicy goodness of this dish!
