Ingredients

4 slices of crusty sourdough bread

1 cup fresh mozzarella cheese, sliced (preferably buffalo mozzarella for creaminess)

1 ripe tomato, sliced into thick rounds

1 avocado, sliced

1/2 cup fresh basil leaves, whole

1/4 cup balsamic vinaigrette (store-bought or homemade)

1 tablespoon extra virgin olive oil

Salt and freshly ground black pepper, to taste

Additional cracked black pepper for garnish (optional)

Instructions

Prepare the Ingredients: Begin by thoroughly washing and slicing the sourdough bread, fresh mozzarella, tomato, and avocado into even slices. Set them aside on a clean cutting board for easy assembly.

Assemble the Sandwich: Take two slices of the sourdough bread and layer them on a clean surface. Start with a layer of fresh mozzarella, followed by the thick tomato slices, avocado slices, and a handful of fragrant basil leaves. Drizzle approximately 2 tablespoons of balsamic vinaigrette over the top, and season with a pinch of salt and freshly ground black pepper. Carefully place the remaining two slices of sourdough on top to complete your sandwich.

Heat the Pan: In a non-stick skillet or griddle, pour in the extra virgin olive oil and heat it over medium heat. Allow the oil to warm for about a minute, ensuring it’s hot but not smoking.

Grill the Sandwich: Gently place the assembled sandwich in the hot skillet. Cook for about 3-4 minutes, or until the bottom slice of bread is beautifully golden brown and crisp.

Flip and Finish: Using a spatula, carefully flip the sandwich over. Continue grilling for another 3-4 minutes, keeping a close eye on it to ensure the bread doesn’t burn, until the other side is golden and the mozzarella cheese is properly melted.

Slice and Serve: Once grilled to perfection, remove the sandwich from the skillet and let it rest for a minute on a cutting board. This helps the cheese set slightly, making slicing easier. Cut the sandwich in half diagonally for a nice presentation. Drizzle with any remaining balsamic vinaigrette and sprinkle with cracked black pepper if desired.

Enjoy! Serve the sandwich warm, paired with a fresh side salad or crispy chips for a delightful and satisfying meal!
