Grilled Lime Bowls

Ingredients
  

4 large limes

1 cup cooked quinoa

1 can (15 oz) black beans, drained and rinsed

1 medium red bell pepper, diced

1 cup corn kernels (fresh, frozen, or canned)

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely diced

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Optional: Crumbled feta cheese or vegan cheese for topping

Instructions
 

Prepare the Limes: Slice the limes in half lengthwise and, using a small spoon or a melon baller, gently scoop out the insides, ensuring to leave a thin layer of lime flesh attached to the rind. Set aside the scooped-out lime flesh for use in the filling or future recipes.

    Make the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, diced red bell pepper, corn kernels, diced avocado, halved cherry tomatoes, chopped cilantro, and finely diced red onion. Mix gently but thoroughly to combine the ingredients evenly.

      Dress the Salad: In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, and a pinch of salt and pepper. Pour this dressing over the quinoa and vegetable mixture, tossing gently to ensure every component is well-coated with the zesty dressing.

        Preheat the Grill: Heat your grill or grill pan over medium-high heat until hot.

          Grill the Lime Bowls: Lightly brush the cut sides of the lime halves with a bit of olive oil to prevent sticking. Place the limes on the grill cut-side down and grill for approximately 3-4 minutes, or until they develop nice grill marks and soften slightly.

            Fill the Bowls: Once grilled, carefully remove the lime halves from the grill. Use a spoon to generously scoop the quinoa and vegetable mixture into each hollow lime half, filling them to the brim.

              Serve & Enjoy: For added flavor, if desired, sprinkle crumbled feta cheese or vegan cheese on top of each filled lime bowl. Serve immediately, garnished with extra cilantro and lime wedges on the side for a vibrant presentation.
