1 pound ground turkey

1 cup cooked rice (white or brown)

1 cup Hatch green chiles, diced (fresh or canned)

1 small onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar cheese

½ cup sour cream

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Turkey: Heat a large skillet over medium heat and add the ground turkey. Cook for about 5-7 minutes, breaking it apart with a spatula, until it is well browned. If there is excess fat, drain it off.

    Add Aromatics: To the browned turkey, add the diced onion and minced garlic. Sauté for 3-4 minutes until the onion is soft and translucent, stirring occasionally.

      Season the Mixture: Sprinkle in the ground cumin, smoked paprika, chili powder, along with salt and pepper. Stir the mixture well and cook for an additional 2 minutes to allow the spices to become fragrant.

        Incorporate Vegetables: Fold in the diced Hatch green chiles, black beans, and corn into the turkey mixture. Cook for another 3-5 minutes, stirring occasionally, until warmed through and all ingredients are well mixed.

          Mix in Rice and Cheese: Stir in the cooked rice and half of the shredded cheddar cheese, mixing everything until the cheese melts and is evenly distributed throughout the filling.
