2 tablespoons extra virgin olive oil

2 medium carrots, peeled and diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon dried thyme

1 bay leaf

6 cups vegetable broth (preferably low-sodium)

1 can (14.5 oz) diced tomatoes (do not drain)

Sea salt and freshly cracked black pepper, to taste

1 tablespoon freshly squeezed lemon juice

Fresh parsley, chopped (for garnish)

Prepare the Lentils: Begin by rinsing the lentils under cold running water to remove any debris. Drain and set them aside in a bowl for later use.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5 minutes, or until the onion becomes translucent. Then, add the minced garlic and cook for an additional 1-2 minutes, stirring until the garlic is fragrant but not browned.

      Cook the Vegetables: Incorporate the diced carrots and celery into the pot. Cook for approximately 5-7 minutes, stirring occasionally, until the vegetables begin to soften and brighten in color.
