2 medium sweet potatoes, peeled and diced into small cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), chopped

1 cup spinach (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon dried thyme

¼ teaspoon red pepper flakes (optional, adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

½ cup low-sodium chicken broth

Fresh parsley, chopped (for garnish)

Prepare Ingredients: Start by peeling and dicing the sweet potatoes into small, even cubes to ensure they cook uniformly. Finely chop the onion and bell pepper, and mince the garlic. If you're using fresh spinach, rinse it well and set it aside for later use.

    Cook the Turkey: In a large, deep skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and season it with a sprinkle of salt and pepper. Cook for about 6-8 minutes, stirring frequently and breaking the meat apart with a spatula, until it’s browned and no longer pink.

      Sauté the Vegetables: Once the turkey is cooked, transfer it to a plate and set it aside. In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced sweet potatoes, chopped onion, and bell pepper. Sauté the mixture for approximately 5-7 minutes, stirring occasionally, until the sweet potatoes begin to soften but aren't fully cooked yet.

        Incorporate Garlic and Spices: Add the minced garlic to the skillet along with the smoked paprika, cumin, dried thyme, and red pepper flakes if you're using them. Stir well to combine and cook for an additional 1-2 minutes, or until fragrant.

          Combine All Ingredients: Return the browned turkey to the skillet. Pour in the chicken broth and stir everything together until evenly mixed. Bring the mixture to a gentle simmer.
