Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, freshly grated

1 cup mozzarella cheese, freshly grated

1 cup frozen peas, thawed

4 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, finely chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta in a colander and set aside.

Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once the butter is fully melted, add the all-purpose flour. Whisk continuously for about 2 minutes until the mixture becomes bubbly and lightly golden; this forms your roux.

Add Milk and Seasonings: Gradually whisk in the whole milk, ensuring to whisk continuously to eliminate any lumps. Keep cooking on medium heat until the mixture thickens, approximately 5-7 minutes. Stir in garlic powder, onion powder, smoked paprika, and season generously with salt and pepper to taste.

Incorporate Cheese: Remove the saucepan from heat, and add both the grated cheddar and mozzarella cheeses to the hot sauce. Stir well until both cheeses have melted and the sauce is silky. Gently fold in the thawed peas, mixing until evenly distributed.

Combine Pasta and Sauce: In a large mixing bowl, combine the cooked elbow macaroni and the creamy cheese sauce. Stir vigorously until the pasta is thoroughly coated in the sauce.

Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish and pour the mac and cheese mixture into it, spreading evenly.

Prepare the Topping: In a small mixing bowl, combine the breadcrumbs with grated Parmesan cheese and drizzle in the olive oil. Mix until the breadcrumbs are evenly coated, then sprinkle the mixture evenly over the top of the mac and cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and crispy.

Garnish and Serve: Once baked, carefully remove the dish from the oven and allow it to rest for about 5 minutes to set. Garnish with finely chopped fresh parsley for a pop of color before serving.

                    Prep Time: 20 minutes | Total Time: 1 hour | Servings: 4-6
