Instructions

Prepare the Meatloaf Mixture:

    - Preheat your oven to 350°F (175°C).

      - In a large mixing bowl, combine the ground beef, breadcrumbs, milk, finely chopped onion, minced garlic, egg, Worcestershire sauce, oregano, thyme, salt, and black pepper. Mix gently with your hands or a spoon until just combined, taking care not to overmix, which helps the meatloaf maintain its tender texture.

        Shape and Bake:

          - Transfer the meat mixture into a loaf pan for uniform shape, or create a free-form loaf on a lined baking sheet for a rustic look.

            - Evenly spread the 1/4 cup of ketchup over the top of the meatloaf. For a sweet glaze, mix the brown sugar into the ketchup before spreading.

              - Bake in the preheated oven for 1 hour, or until the internal temperature registers 160°F (70°C) on a meat thermometer. Once baked, allow the meatloaf to rest for 10 minutes before slicing, which helps the juices redistribute.

                Prepare the Garlic Mashed Potatoes:

                  - While the meatloaf is baking, fill a large pot with water and add a generous amount of salt. Bring to a boil. Add the chopped potatoes and whole garlic cloves, cooking until the potatoes are fork-tender, approximately 15-20 minutes.

                    - Drain the potatoes and garlic thoroughly, then return them to the pot. Add the milk and unsalted butter, mashing everything together until smooth and creamy. Adjust seasoning with salt and freshly ground black pepper to your taste.

                      Serve:

                        - Slice the meatloaf into generous portions and plate it alongside a hearty scoop of creamy garlic mashed potatoes. For an artistic touch, garnish with freshly chopped chives or parsley for a burst of color and fresh flavor.
