1 lb (450g) boneless, skinless chicken thighs

1/2 cup honey

1/4 cup low-sodium soy sauce

4 cloves garlic, finely minced

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

8 mini slider buns (brioche or potato rolls work wonderfully)

1 cup sharp cheddar cheese, shredded

1/4 cup green onions, finely chopped

Lettuce or coleslaw (for topping)

Salt and freshly ground pepper to taste

Cooking oil (for frying)

Marinate the Chicken: In a medium bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, sesame oil, and grated ginger until well combined. Add the chicken thighs to the marinade, making sure they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or ideally, up to overnight for enhanced flavor.

    Cook the Chicken: After marinating, take the chicken out of the marinade (set the marinade aside for later) and season both sides with salt and pepper. Heat a drizzle of cooking oil in a skillet over medium heat. Once the oil is shimmering, add the chicken thighs, cooking for about 5-7 minutes per side, or until the chicken is cooked through and has a nice golden brown color.

      Prepare the Sauce: In a small saucepan, combine the reserved marinade with cornstarch and water, stirring until smooth. Place over medium heat and bring to a gentle simmer, stirring continuously until the sauce thickens, approximately 3-5 minutes. Once thickened, remove from heat and set aside.

        Shred the Chicken: Once the chicken is fully cooked, allow it to rest for a few minutes before shredding it using two forks. Place the shredded chicken in a bowl and toss with the thickened sauce until each piece is well coated.

          Assemble the Sliders: Preheat your oven to 350°F (175°C). Slice the slider buns in half and lay the bottom halves on a baking sheet. Generously pile the sauce-coated honey garlic chicken onto each bun, followed by a handful of shredded sharp cheddar cheese.

            Melt the Cheese: Bake the assembled sliders in the preheated oven for 5-7 minutes, or until the cheese has melted and the bun edges are lightly toasted.

              Top and Serve: Once out of the oven, add fresh lettuce or coleslaw along with a sprinkle of chopped green onions atop each slider. Place the bun tops on, slice if desired, and serve immediately while warm.
