1 large onion, thinly sliced

3 cloves garlic, minced

2 large roasted red bell peppers, sliced (store-bought or homemade)

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust based on your spice preference)

1/2 cup chicken broth (or vegetable broth for a vegetarian option)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, add the penne pasta. Cook according to package instructions until al dente, typically about 9-11 minutes. Drain the pasta and set aside.

    Brown the Sausage: In a large skillet over medium heat, pour in the olive oil. Once the oil is shimmering, add the crumbled Italian sausage. Cook, stirring occasionally, for around 5-7 minutes or until the sausage is browned and cooked through. Use a spoon to break it into smaller pieces as it cooks. Once done, transfer the sausage to a plate, leaving some of the rendered fat in the skillet for flavor.
