Ingredients

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, finely minced

1/4 cup fresh lemon juice (approximately the juice of 2 lemons)

Zest of 1 lemon

1 teaspoon red pepper flakes (adjust based on your spice tolerance)

Salt and freshly ground black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

For the Rice:

1 cup jasmine rice

2 cups water or low-sodium chicken broth

1 tablespoon olive oil

1/2 teaspoon salt

Zest of 1 lemon (optional, enhances flavor)

Instructions

Prepare the Rice:

    - In a medium saucepan, combine the jasmine rice, water or chicken broth, olive oil, salt, and optional lemon zest for an added burst of flavor.

      - Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes until the rice is tender and all the liquid has been absorbed.

        - Once cooked, fluff the rice gently with a fork and set it aside, keeping it warm.

          Cook the Shrimp:

            - While the rice is cooking, heat a large skillet over medium heat. Add the butter and allow it to melt completely, swirling the pan to ensure even coverage.

              - Once the butter has melted, add the minced garlic and sauté for about 30 seconds, stirring constantly until it becomes fragrant but is not browned, as burnt garlic can turn bitter.

                Add the Shrimp:

                  - Carefully add the peeled and deveined shrimp to the skillet. Season with red pepper flakes, salt, and freshly ground black pepper.

                    - Sauté the shrimp for 2-3 minutes, stirring occasionally, until they turn a lovely pink color and become opaque.

                      Add Lemon Juice & Zest:

                        - Pour in the fresh lemon juice and sprinkle in the lemon zest. Stir swiftly to coat all the shrimp in the aromatic lemon garlic butter sauce, cooking for an additional minute to allow the flavors to meld beautifully.

                          Combine and Serve:

                            - Once cooked, remove the skillet from the heat. Serve the luscious garlic butter shrimp generously over a bed of warm jasmine rice.

                              - Garnish your dish with chopped fresh parsley, and don’t forget to drizzle any remaining sauce from the skillet over the shrimp for that extra punch of flavor.

                                Enjoy:

                                  - Serve immediately while it's still hot, and consider adding a wedge of lemon on the side for an additional refreshing zesty kick!
