Ingredients

For the Lemon Herb Chicken:

4 boneless, skinless chicken breasts

1/4 cup extra virgin olive oil

Zest and juice of 2 medium lemons

3 garlic cloves, finely minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Fresh parsley, finely chopped (for garnish)

For the Couscous:

1 cup couscous

1 1/4 cups low-sodium chicken broth

1 tablespoon extra virgin olive oil

1/2 teaspoon kosher salt

1/4 cup chopped fresh parsley

Zest of 1 lemon

1/4 cup toasted pine nuts (optional)

Instructions

Marinate the Chicken:

    - In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper. Whisk until well blended.

      - Add the chicken breasts to the marinade, ensuring they are fully coated. Cover with plastic wrap or a lid and refrigerate. Allow the chicken to marinate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.

        Cook the Chicken:

          - Preheat your grill or a large non-stick skillet over medium-high heat. If using a skillet, lightly grease it with a bit of olive oil.

            - Once preheated, remove the chicken from the marinade, letting excess marinade drip off.

              - Grill or pan-sear the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the outside is beautifully golden brown.

                - Transfer the chicken to a plate and let it rest for 5 minutes before slicing to allow the juices to redistribute.

                  Prepare the Couscous:

                    - In a medium saucepan, bring the chicken broth to a rolling boil. Add couscous, olive oil, and salt, stirring to combine.

                      - Immediately cover the saucepan with a lid and remove it from the heat. Let it sit undisturbed for 5 minutes.

                        - After the resting period, use a fork to fluff the couscous gently, then incorporate the lemon zest, chopped parsley, and toasted pine nuts if desired.

                          Serve:

                            - To serve, place a generous mound of fluffy couscous on each plate and top with slices of the lemon herb chicken.

                              - Garnish with additional chopped parsley for a pop of color and freshness. Optionally, include lemon wedges on the side for a zesty squeeze before eating.
