Ingredients

1.5 lbs baby Yukon gold potatoes, diced into bite-sized pieces

2 tablespoons olive oil, divided

Salt and freshly ground black pepper, to taste

1 lb boneless, skinless chicken breasts, cubed

6 strips of bacon, chopped into small pieces

1 medium onion, finely diced

3 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup green onions, finely chopped (for garnish)

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Instructions

Prep Potatoes: Heat 1 tablespoon of olive oil in a large, heavy skillet over medium heat. Once hot, add the diced Yukon gold potatoes, season generously with salt and pepper, and sauté for 10-12 minutes. Stir occasionally until the potatoes are golden brown and tender. Once cooked, transfer the potatoes to a bowl and set aside.

Cook Bacon: In the same skillet, add the chopped bacon. Cook over medium heat for about 5-7 minutes or until the bacon is crispy and golden, stirring occasionally. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain. Leave about 1 tablespoon of bacon grease in the skillet for added flavor.

Sauté Chicken: If needed, add the remaining tablespoon of olive oil to the skillet with the bacon grease. Add the cubed chicken breasts, then season with smoked paprika, onion powder, garlic powder, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until the chicken is browned and fully cooked through.

Add Onions and Garlic: Incorporate the diced onion and minced garlic into the skillet with the chicken. Sauté for an additional 3-4 minutes until the onion becomes translucent and the garlic is fragrant.

Combine Ingredients: Gently fold the cooked Yukon gold potatoes back into the skillet along with the crispy bacon. Stir everything together until the chicken, potatoes, and bacon are well combined and heated through.

Melt Cheese: Evenly sprinkle the shredded cheddar cheese over the entire skillet. Cover the skillet with a lid and reduce heat to low. Allow it to cook for 3-5 minutes, or until the cheese is melted and bubbly.

Finish and Serve: Remove the skillet from the heat. Drizzle the sour cream over the top and sprinkle with freshly chopped green onions for garnish. Serve hot and relish the delightful flavors of your loaded chicken and bacon potato skillet!
