1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

¼ tsp ground nutmeg

¾ cup granulated sugar

½ cup packed brown sugar

½ cup unsalted butter, softened to room temperature

2 large eggs

1 tsp vanilla extract

1 cup apples, peeled and diced (approximately 2 medium apples)

½ cup walnuts or pecans, chopped (optional)

2 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare mini loaf pans (yielding 4-5 mini loaves) by greasing them or lining with parchment paper for effortless removal after baking.

    Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg until well combined. Set this mixture aside as you continue with the other steps.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and packed brown sugar. Beat this combination for about 3-4 minutes, until it becomes fluffy and light in color.

        Add Eggs and Vanilla: Incorporate the eggs into the butter-sugar mixture one at a time, ensuring that each egg is well blended before adding the next. After incorporating the eggs, mix in the vanilla extract.
