1 teaspoon salt

½ teaspoon garlic powder

½ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¾ cup buttermilk

For the Chili Filling:

1 cup cooked chili (canned or homemade, preferably with beans)

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ cup diced onions, sautéed until translucent

½ cup diced bell peppers, sautéed until softened

Optional: hot sauce, to taste

For Toppings:

Extra shredded cheddar cheese

Sliced jalapeños

Fresh cilantro, chopped

Sour cream, for serving

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

    Make the Biscuit Dough:

      - In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and garlic powder, whisking until evenly mixed.

        - Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut in the butter until the mixture resembles coarse crumbs.

          - Mix in the shredded sharp cheddar cheese until it's well distributed throughout the dough.

            - Gradually pour in the buttermilk and gently stir until the ingredients just come together. Be careful not to overmix to maintain the biscuit's flakiness.

              Form the Biscuits:

                - Transfer the dough to a floured work surface. Knead it gently a few times—just enough to bring it together.

                  - Flatten the dough into a rectangle approximately ½ inch thick.

                    - Using a biscuit cutter or a glass, cut out rounds about 2 inches in diameter. Gather and re-roll any leftover dough scraps until all the dough is used.

                      Prepare the Chili Filling:

                        - In a medium bowl, combine the cooked chili, ground cumin, smoked paprika, sautéed onions, and sautéed bell peppers. If desired, adjust the seasoning and add a splash of hot sauce for an extra kick.

                          Assemble the Sliders:

                            - On the prepared baking sheet, lay out half of the biscuit rounds. Spoon a generous amount of the chili mixture onto each of these rounds.

                              - Top each chili-filled round with another biscuit round to create your sliders.

                                Bake the Sliders:

                                  - For a golden finish, brush the tops of the sliders with melted butter or a splash of buttermilk.

                                    - Sprinkle some extra shredded cheddar cheese over the tops of the assembled sliders.

                                      - Place in the preheated oven and bake for 15-20 minutes, or until the biscuits are golden brown and fully cooked.

                                        Serve:

                                          - Once baked, remove the sliders from the oven and allow them to cool for a few minutes.

                                            - Serve warm, garnished with sliced jalapeños, chopped cilantro, and a dollop of sour cream for a delightful, creamy addition.
