1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1/4 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and pepper, to taste

1/2 cup breadcrumbs (or gluten-free alternative)

1 tablespoon olive oil

1 head of butter lettuce (or romaine), leaves separated and thoroughly washed

1/2 cup tzatziki sauce (store-bought or homemade)

Sliced cherry tomatoes (for garnish)

Optional: Pickled red onions (for garnish)

Instructions
 

Prepare the Falafel Mixture: In a food processor, add the drained chickpeas, chopped parsley, chopped cilantro, onion, minced garlic, ground cumin, ground coriander, baking powder, salt, and pepper. Pulse the mixture until it becomes well combined but still retains a slightly chunky texture.

    Incorporate Breadcrumbs: Add the breadcrumbs to the chickpea mixture and pulse a few more times until the mixture holds together when pressed. If the mixture feels too wet, add more breadcrumbs gradually; if too dry, you can add a small drizzle of water to achieve the desired consistency.

      Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

        Shape the Falafel: Using your hands, roll the falafel mixture into small balls, each about the size of a tablespoon. Place the balls evenly on the prepared baking sheet. To help them crisp up during baking, lightly brush or spray the tops with olive oil.

          Bake the Falafel: Bake in the preheated oven for approximately 20-25 minutes. Flip the falafel halfway through the baking time to ensure even browning. They should be golden brown and crispy on the outside when done.
