Ingredients

1 lb (450 g) boneless, skinless chicken breast

1 cup sweet corn kernels (fresh or frozen)

1 tsp chili powder

1/2 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 tbsp olive oil

12 mini tortilla cups (store-bought or homemade)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup diced red onion

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt (for serving)

Lime wedges (for serving)

Instructions

Prepare the Chicken: Begin by preheating your grill or grill pan over medium-high heat. Season the chicken breasts evenly with chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. Drizzle the olive oil over the chicken to enhance flavor and prevent sticking. Grill the chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the grill and allow it to rest for about 5 minutes before handling.

Shred the Chicken: After the chicken has rested, chop or shred it into bite-sized pieces, ensuring it's well mixed for an even distribution in the taco cups.

Grill the Corn (Optional): If you're using fresh corn, grill the corn on the cob for about 5-7 minutes until it is slightly charred and tender. Once done, let it cool for a few minutes, then slice the kernels off the cob. If using frozen corn, simply thaw it according to package instructions, ensuring it’s ready to mix into your filling.

Combine the Filling: In a spacious mixing bowl, combine the shredded chicken, grilled corn, diced tomatoes, diced red onion, and half of the chopped cilantro. Toss everything gently but thoroughly until all ingredients are well mixed.

Build the Taco Cups: Arrange the mini tortilla cups on a serving platter. Generously spoon the chicken and corn mixture into each tortilla cup, taking care to fill them to the brim for a delicious bite.

Add Toppings: Top each taco cup with a handful of shredded lettuce, a sprinkle of shredded cheese, and a generous dollop of sour cream or Greek yogurt. Finish by garnishing with the remaining chopped cilantro to add a pop of color and extra flavor.

Serve: Present the mini grilled corn chicken taco cups immediately, accompanied by lime wedges for guests to squeeze over the top, elevating the flavors before digging in.
