Mini Sweet Potato BLT Sliders

2 medium sweet potatoes

8 slices of crispy bacon, cooked until golden

1 cup fresh arugula or baby spinach

1/4 cup mayonnaise

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

8 small slider-sized buns (adjust quantity based on the number of sweet potato slices)

Prepare the Sweet Potatoes: Preheat your oven to 450°F (230°C). Start by washing the sweet potatoes thoroughly to remove any dirt. Slice them into rounds about 1 inch thick. In a mixing bowl, toss the sweet potato rounds with olive oil, smoked paprika, salt, and pepper, ensuring they're evenly coated.

    Roast the Sweet Potatoes: Line a baking sheet with parchment paper and arrange the seasoned sweet potato slices in a single layer. Roast them in the preheated oven for 20-25 minutes. Flip the slices halfway through the cooking time until they are tender and have developed a beautiful caramelization on the edges.

      Prepare the Sauce: While the sweet potatoes are roasting, combine the mayonnaise and Dijon mustard in a small bowl. Mix well until smooth and set aside for later use.
