1 ripe avocado, peeled and pitted

1 tablespoon Greek yogurt (or alternative: mayonnaise)

1 teaspoon Dijon mustard

1 teaspoon freshly squeezed lemon juice

Salt and freshly ground pepper, to taste

8 small slices of whole-grain bread (or 4 large slices cut in half)

1 small cucumber, thinly sliced into rounds

Fresh dill or parsley, finely chopped, for garnish

Olive oil, for toasting

Instructions
 

Prepare the Tuna Mix:

    - In a medium-sized mixing bowl, use a fork to mash the ripe avocado until it reaches a smooth yet slightly chunky texture.
