Ingredients

2 large cucumbers

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise (or substitute with Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

2 tablespoons finely chopped red onion

2 tablespoons finely chopped celery

1 tablespoon capers, rinsed and chopped

Salt and pepper to taste

Fresh dill or parsley, for garnish

Instructions

Prepare the Cucumbers: Start by washing the cucumbers under running water to remove any dirt. Slice each cucumber into rounds that are approximately 1-inch thick. After slicing, use a paper towel to gently pat the rounds dry, ensuring there is no excess moisture. These cucumber slices will act as your serving base for the stacks.

Make the Tuna Salad: In a medium-sized mixing bowl, add the drained tuna. Follow this with the mayonnaise (or Greek yogurt), Dijon mustard, and fresh lime juice. Add the finely chopped red onion, celery, and chopped capers. Mix all the ingredients together with a fork or spoon until well combined. Taste the mixture and season it with salt and pepper to your preference.

Assemble the Stacks: Take a serving platter and begin assembling your stacks. Place one cucumber slice at the bottom as your base. Using a spoon, scoop a generous tablespoon of the tuna salad mixture and spread it onto the cucumber slice. Top it with another cucumber slice and repeat the process to form a stack. You can create as many stacks as desired based on the slices available.

Garnish and Serve: After assembling the stacks, add a finishing touch by sprinkling fresh dill or parsley on top of each stack for added flavor and visual appeal. Serve these delightful cucumber stacks immediately, or you can refrigerate them for a short while until they are ready to be enjoyed.
