Prepare the Zucchini: Begin by slicing the zucchinis into thin rounds, approximately 1/4 inch thick. Sprinkle the slices generously with salt and allow them to rest for about 15 minutes. This process helps to draw out excess moisture. After 15 minutes, use a paper towel to pat the zucchini slices dry.

    Sauté the Zucchini: In a skillet, heat 1 tablespoon of olive oil over medium heat until shimmering. Add the salted and dried zucchini slices, seasoning them lightly with pepper. Sauté the zucchini for 3-4 minutes, or until they are tender and slightly golden on the edges. Once cooked, remove them from the heat and set aside.

      Assemble the Sandwiches: Take two slices of your chosen bread. On one slice, spread a thin, even layer of softened butter. On the other slice, sprinkle a generous mix of cheddar and mozzarella cheeses to create a flavorful base. Layer the sautéed zucchini slices over the cheese, followed by a little more cheese on top of the zucchini for added melty goodness. Place the buttered slice on top, buttered side facing out, to form a complete sandwich.

        Grill the Sandwiches: Return the skillet to medium heat and carefully place the assembled sandwich into the skillet. Grill for about 3-4 minutes or until the bread is golden brown. Using a spatula, gently flip the sandwich over and continue to cook the other side, pressing down lightly to ensure even toasting, for another 3-4 minutes. Repeat this process with the remaining sandwiches.
