Prepare the Cherries: If you opt for fresh cherries, rinse them under cool water and remove the pits carefully. For frozen cherries, allow them to thaw slightly at room temperature for about 10 minutes until they’re softer.

    Blend the Base: In a high-powered blender or food processor, add the prepared cherries, granulated sugar, lemon juice, vanilla extract, water, and a pinch of salt. Blend until the mixture is completely smooth and all the ingredients are thoroughly incorporated. Taste the mixture and, if desired, adjust the sweetness by adding more sugar until you achieve your preferred flavor.

      Strain the Mixture (Optional): For an ultra-smooth texture, pour the blended mixture through a fine-mesh sieve into a bowl, using a spatula to push through as much liquid as possible while discarding any solids. Note that leaving some cherry pulp will enhance the flavor and texture.
