One-Pan Cheesy Beef and Broccoli Bake

1 lb (450g) ground beef

2 cups broccoli florets (can be fresh or frozen)

1 cup cooked rice (choose between white, brown, or cauliflower rice for a low-carb option)

1 cup shredded cheddar cheese

½ cup cream cheese, softened at room temperature

1 cup beef broth (low sodium preferred)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ cup breadcrumbs (optional, for a crispy topping)

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Preheat the oven: Begin by preheating your oven to 375°F (190°C) so it’s ready when your dish is prepared.

    Cook the beef: In a large oven-safe skillet, heat the olive oil over medium heat. Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it is no longer pink and starts to brown. Drain any excess fat to keep the dish from getting greasy.

      Season the beef: Add the garlic powder, onion powder, Italian seasoning, salt, and pepper to the cooked beef. Stir thoroughly to ensure all the meat is evenly seasoned.

        Add broccoli: Gently fold in the broccoli florets, cooking them with the beef mixture for about 3-4 minutes, or until they begin to soften but still have a slight crunch.

          Combine rice and cheeses: Lower the heat to low. Add the cooked rice to the skillet, followed by the softened cream cheese and half of the shredded cheddar cheese. Pour in the beef broth and stir everything together until the cream cheese has melted and is incorporated smoothly into the mixture.

            Top with cheese: Evenly sprinkle the remaining shredded cheddar cheese over the beef and broccoli mix in the skillet. If you like an added crunch, sprinkle breadcrumbs on top as well.
