1 lb (450g) ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 cup uncooked long-grain rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, with their juices

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 1/2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or sauté pan set over medium heat, add the ground beef and diced onion. Cook, stirring occasionally, until the beef is browned and the onion is soft, approximately 5-7 minutes. Drain any excess fat from the pan.

    Add the minced garlic to the skillet and cook for an additional 1 minute, stirring constantly until fragrant.

      Incorporate the uncooked long-grain rice into the mixture, followed by the beef broth, diced tomatoes (including the juices), frozen mixed vegetables, smoked paprika, dried oregano, salt, and black pepper. Stir well to ensure all ingredients are combined thoroughly.

        Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 20-25 minutes. This will allow the rice to become tender and absorb most of the liquid. Stir occasionally to prevent the rice from sticking to the bottom of the pan.

          When the rice is cooked and fluffy, evenly sprinkle the shredded cheddar cheese over the casserole. Cover the skillet again and let it rest for about 5 minutes, allowing the cheese to melt and become gooey.
