Ingredients

4 boneless, skinless chicken thighs

1 cup long-grain white rice

1 medium onion, diced

4 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions

Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Generously season the chicken thighs with salt, pepper, paprika, and dried thyme. Once the oil is shimmering, carefully add the chicken to the skillet. Sear for about 5-6 minutes on each side until the chicken is golden brown. After searing, remove the chicken from the skillet and set aside on a plate.

Sauté Aromatics: In the same skillet, add the diced onion. Sauté for 3-4 minutes, stirring until it becomes softened and translucent. Add the minced garlic and cook for an additional 1-2 minutes, stirring constantly to ensure the garlic does not burn.

Add Rice: Next, stir in the uncooked long-grain white rice, allowing it to toast for about 1 minute with the onion and garlic. This step will enhance the natural flavor of the rice.

Pour in Liquids: Gradually pour in the chicken broth and heavy cream, stirring consistently to combine all ingredients. Increase the heat slightly until the mixture comes to a gentle simmer.

Cook the Chicken and Rice: Return the seared chicken thighs to the skillet, pressing them gently into the rice mixture. Cover the skillet with a lid and reduce the heat to low. Allow it to cook for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

Add Peas: After the rice is cooked, remove the lid from the skillet and stir in the frozen peas. Cover the skillet again and turn off the heat, letting it sit for an additional 5 minutes. This will allow the peas to thaw and warm through, while also letting the flavors meld together.

Serve: Use a fork to fluff the rice gently, integrate the chicken and peas, and garnish with freshly chopped parsley. Serve warm and enjoy your creamy, garlicky chicken and rice!
