Ingredients

1 lb (450g) ground beef

8 oz (227g) pasta (penne or rotini are great choices)

2 cups broccoli florets (fresh or frozen)

4 cups beef broth (low-sodium recommended)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 medium onion, diced

3 cloves of garlic, minced

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for added heat)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Beef: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic, cooking until the onion becomes translucent, approximately 3-4 minutes. Then, add the ground beef, breaking it apart with a wooden spoon. Cook until the beef is browned and no longer pink, about 5-7 minutes. Season the mix with salt, pepper, and optional red pepper flakes for a spicy kick.

Add the Broth and Pasta: Carefully pour in the beef broth, then stir in the uncooked pasta, soy sauce, and Italian seasoning. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Cover the pot and let it cook for around 8-10 minutes, or until the pasta is cooked al dente.

Incorporate the Broccoli: When the pasta is just about done, add the broccoli florets to the pot. Stir to combine, then cover again. Allow it to cook for an additional 3-5 minutes, or until the broccoli is tender yet still vibrant in color.

Stir in the Cheese: Lower the heat to a gentle simmer. Gradually add the shredded cheddar and grated Parmesan cheese into the pot, stirring continuously until the cheeses melt and create a creamy sauce. Taste and adjust the seasoning with extra salt and pepper as needed.

Serve: Once combined, remove the pot from the heat and let it sit for a couple of minutes to thicken slightly. Serve hot in bowls, garnished with freshly chopped parsley to brighten the dish and add a touch of freshness.

Presentation Tips: For added elegance, serve in shallow bowls with a sprinkle of extra cheese on top and a sprig of parsley for color. A side of crusty bread pairs beautifully!
