1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup (200g) uncooked brown rice

2 cups (480ml) low-sodium chicken broth

2 cups (150g) fresh broccoli florets

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

1 cup (120g) shredded sharp cheddar cheese

1/2 cup (120ml) heavy cream

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh parsley, minced (for garnish)

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced chicken pieces and season generously with salt, pepper, and smoked paprika. Cook the chicken for about 5-7 minutes, stirring occasionally, until it is nicely browned on all sides. Remove the chicken from the pot and set it aside on a plate.

    Cook Aromatics: In the same pot, add the butter and chopped onion. Sauté for 3-4 minutes, allowing the onions to soften and become translucent. Next, add the minced garlic and dried thyme, stirring for an additional minute until fragrant and flavorful.

      Add Rice and Broth: Stir in the uncooked brown rice, mixing it thoroughly with the sautéed aromatics. Pour in the chicken broth and increase the heat slightly to bring the mixture to a gentle simmer.

        Combine Chicken and Broccoli: After the mixture is simmering, return the browned chicken to the pot, along with the fresh broccoli florets.
