Ingredients

1 tablespoon olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 pound andouille sausage, sliced into coins

1 teaspoon Cajun seasoning (plus additional for seasoning)

1 cup orzo pasta

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 green onions, thinly sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté for about 3-4 minutes until it becomes soft and translucent. Stir in the minced garlic and cook for an additional 1 minute, ensuring it doesn’t burn but becomes fragrant.

Add vegetables and sausage: Incorporate the diced red and green bell peppers into the pot, along with the sliced andouille sausage. Sprinkle the Cajun seasoning over the mixture and stir well to coat all ingredients evenly. Cook for approximately 5-6 minutes, allowing the sausage to slightly brown and the vegetables to soften.

Incorporate the orzo: Add the orzo pasta to the pot and give it a good stir to combine it with the sausage and vegetable mixture, ensuring the pasta is evenly distributed.

Pour in the broth: Gradually add the chicken or vegetable broth to the pot while stirring occasionally. Bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pot. Allow it to simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed.

Add cream and cheese: Once the orzo is cooked through, slowly pour in the heavy cream and stir well to blend. Gradually mix in the grated Parmesan cheese while stirring continuously until the sauce becomes creamy and smooth. Adjust the seasoning with salt and pepper to your preference.

Garnish and serve: Remove the pot from the heat. Before serving, garnish the creamy Cajun orzo with sliced green onions and chopped parsley for a vibrant finish. Serve warm and relish your delicious, one-pot meal!
