Parmesan Zoodle Gratin with Garlic Sauce

4 medium zucchinis, spiralized (for zoodles)

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

3 tablespoons extra-virgin olive oil

4 cloves garlic, finely minced

1/2 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Take a 9x13-inch baking dish and lightly grease it with a drizzle of olive oil to prevent sticking.

    Prepare the Zoodles: Using a spiralizer or a vegetable peeler, transform the zucchinis into zoodles. Once complete, place them on a clean kitchen towel and sprinkle a pinch of salt over them. Allow the zoodles to sit for about 10 minutes. This step helps to draw out any excess moisture that can make your dish watery.

      Make the Garlic Sauce: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until the garlic is fragrant but not browned. Reduce the heat and slowly stir in the heavy cream along with Italian seasoning, salt, and pepper. Let it simmer for 3-4 minutes until the sauce has thickened slightly. Remove from heat and mix in half of the grated Parmesan cheese until melted and creamy.

        Combine Zoodles and Sauce: After the zoodles have rested, gently squeeze them in the kitchen towel to eliminate any excess moisture. Transfer the zoodles to a large mixing bowl and pour the creamy garlic sauce over them. Toss everything together until the zoodles are completely coated in the delicious sauce.

          Layer the Gratin: Transfer the zoodle mixture into the prepared baking dish, spreading it out evenly. Top the mixture with the remaining grated Parmesan and shredded mozzarella cheese, ensuring an even layer for a perfectly melted topping.
