When working with soft cheese like brie, it’s essential to handle it carefully to maintain its shape and texture. Begin by removing the brie from its packaging and letting it sit at room temperature for about 30 minutes. This helps the cheese soften, making it easier to slice and fill.

Ingredients

1 medium ripe brie cheese (8-10 oz)

1 ripe pear, thinly sliced

1/2 cup walnuts, roughly chopped

1/4 cup honey

2 sprigs fresh rosemary, finely chopped (or 1 tsp dried rosemary)

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt

1 sheet of puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

Fresh thyme leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.

Prepare the Brie: Carefully unwrap the brie cheese and place it on a baking sheet lined with parchment paper to prevent sticking and facilitate easy cleanup.

Prepare the Pears and Walnuts: In a medium mixing bowl, combine the thinly sliced pears, roughly chopped walnuts, honey, freshly chopped rosemary (or dried), vanilla extract, ground cinnamon, and a small pinch of salt. Stir the mixture well until all the pear slices are evenly coated.

Assemble the Cheese: Spoon the pear and walnut mixture generously over the top of the brie cheese, allowing some of the flavorful mixture to cascade over the sides for an appealing presentation.

Wrap the Brie: On a lightly floured surface, roll out the puff pastry. Cut a circle that is approximately 12 inches in diameter, large enough to envelop the brie completely. Position the wrapped brie seam-side down onto the prepared baking sheet.

Apply the Egg Wash: Using a pastry brush, brush the surface of the puff pastry with the beaten egg. This will give the pastry a beautiful golden color as it bakes.

Bake: Carefully place the baking sheet in the preheated oven. Bake for 25-30 minutes, or until the puff pastry is golden brown and has puffed up delightfully.

Garnish and Serve: Once baked to perfection, remove the dish from the oven and allow it to cool for a few minutes to avoid burns. For an elegant touch, garnish the top with fresh thyme leaves. Serve this warm delight alongside toasted baguette slices or a selection of crackers for dipping.
