4 boneless, skinless chicken breasts

8 oz fresh mozzarella cheese, sliced

1 cup sun-dried tomatoes, chopped (preferably packed in oil for enhanced flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) and allow it to fully preheat.

    Prepare the Chicken:

      - Using a sharp chef's knife, carefully slice each chicken breast horizontally to create a pocket, ensuring to cut halfway through without piercing through the opposite side.

        Season the Chicken:

              - In each chicken pocket, spread approximately 2 tablespoons of fresh pesto.

                  Seal the Pockets:

                    - Secure the openings of the chicken pockets with toothpicks to keep the valuable filling from spilling out during cooking.

                      Sear the Chicken:

                        - In a large, oven-safe skillet, heat the olive oil over medium-high heat.
