1 cup pumpkin puree

4 large eggs

1 cup milk (or your choice of non-dairy milk)

1/2 cup pure maple syrup

1 teaspoon vanilla extract

1/4 teaspoon ground ginger

8 slices of bread (challah, brioche, or your preference)

1/4 cup chopped pecans or walnuts (optional)

Whipped cream for serving (optional)

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a standard muffin tin generously with cooking spray or butter to ensure easy removal of the cups later.

    Prepare the Custard: In a large mixing bowl, combine the pumpkin puree, eggs, milk, maple syrup, and vanilla extract. In addition, add the ground cinnamon, nutmeg, and ginger. Whisk everything together until the mixture is smooth and uniform.

      Cube the Bread: Take each slice of your chosen bread and cut it into small cubes, approximately 1-inch in size. Add these cubes directly to the custard mixture.
