Ingredients

1 cup Arborio rice

4 cups vegetable or chicken broth

1 cup fresh mushrooms, sliced (such as cremini or button mushrooms)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Broth: In a medium saucepan, heat the broth over low heat until it simmers gently. Keep it warm on the stovetop throughout the cooking process to ensure a smooth risotto.

Sauté the Aromatics: In a large skillet, combine the olive oil and 1 tablespoon of butter. Over medium heat, add the finely chopped onion and sauté for approximately 2-3 minutes until it becomes translucent and fragrant.

Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms into the skillet. Cook for about 5-7 minutes, allowing the mushrooms to soften and release their moisture, stirring occasionally.

Toast the Rice: Add the Arborio rice to the skillet, stirring well to combine. Toast the rice for about 1-2 minutes, allowing it to absorb the flavors and release its starch, which helps create the creamy texture later.

Deglaze with Wine (Optional): If you choose to include wine, pour the white wine into the skillet and stir until it’s mostly absorbed, which will enhance the dish's flavor profile.

Add Broth Gradually: Begin adding the warm broth one ladleful at a time, stirring frequently. Wait for each addition to be absorbed by the rice before adding the next. This process will take about 15-20 minutes. The risotto is ready when it is creamy yet the rice is still al dente.

Finish with Cream and Cheese: Once the rice reaches your desired creamy consistency, reduce the heat and stir in the heavy cream, the remaining tablespoon of butter, and the grated Parmesan cheese. Mix thoroughly until everything is well combined. Season with dried thyme, salt, and pepper to taste.

Serve: Remove the skillet from heat and let the risotto rest for a minute. Serve hot, garnished with a sprinkle of fresh parsley and additional Parmesan cheese if desired. Enjoy your Quick and Creamy Mushroom Risotto Delight!
