Quick Chicken Alfredo with Spinach

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

4 cups fresh spinach, packed

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

1/2 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente (typically around 8-10 minutes). Once cooked, drain the pasta and set aside, reserving 1/2 cup of the pasta cooking water for later use.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning, then add them to the skillet. Cook the chicken for 5-7 minutes, or until it is browned on the outside and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Prepare the Sauce: In the same skillet, add the minced garlic, cooking for about 1 minute or until fragrant, being careful not to burn it. Pour in the heavy cream, stirring well as you bring it to a gentle simmer. Gradually stir in the grated Parmesan cheese until it is completely melted and the sauce is creamy. If the sauce appears too thick, gradually add some of the reserved pasta water until you achieve your desired consistency.

        Incorporate Spinach: Add the fresh spinach to the skillet with the creamy sauce, stirring gently until the spinach begins to wilt, which will take about 2-3 minutes. The heat from the sauce will help it along.
