4 medium apples, peeled, cored, and cut into slices

1 cup canned pumpkin purée

1/2 cup packed brown sugar

1 tsp pumpkin pie spice mix

1/2 tsp vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

1/2 tsp ground cinnamon

1/4 tsp salt

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, mix together the sliced apples, pumpkin purée, brown sugar, pumpkin pie spice, and vanilla extract. Stir until the apples are thoroughly coated.

      Pour the apple mixture into a greased 9x9 inch baking dish, spreading it out evenly.

        In another bowl, combine the rolled oats, flour, melted butter, granulated sugar, ground cinnamon, and salt until the texture is similar to coarse crumbs.

          Evenly distribute the oat mixture over the apple layer in the baking dish.

            Place the baking dish in the oven and bake for 30-35 minutes, or until the apples are bubbling and the topping turns a golden brown.

              After baking, take it out of the oven and allow it to cool for a few minutes prior to serving. Enjoy it warm with a scoop of vanilla ice cream if desired!
