Ingredients

1 lb lean ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 can (15 oz) black beans, rinsed and drained

1 cup corn (can be fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

12 large romaine or iceberg lettuce leaves for wrapping

Optional Toppings: diced tomatoes, avocado slices, shredded cheese, sour cream, and sliced jalapeños

Instructions

Sauté the Aromatics: In a large skillet, pour in the olive oil and heat over medium heat. Once hot, add the finely chopped onion and minced garlic. Sauté for about 3–4 minutes, stirring frequently, until the onions are translucent and fragrant.

Cook the Turkey: Add the lean ground turkey to the skillet, using a spatula to break it into small pieces. Cook for approximately 6–8 minutes, or until the turkey is well browned and completely cooked through, ensuring no pink remains.

Season the Filling: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir the mixture well to combine and let it cook for an additional 2 minutes, allowing the spices to release their flavors.

Add Beans and Corn: Carefully fold in the rinsed black beans and corn, mixing until everything is evenly distributed. Cook for another 2–3 minutes until the beans and corn are warm and heated through.

Finishing Touches: Remove the skillet from heat and stir in the chopped fresh cilantro and lime juice. Mix thoroughly to ensure all ingredients are well incorporated.

Assemble the Wraps: Take a large lettuce leaf and spoon a generous amount of the turkey taco mixture into the center. Top with your choice of diced tomatoes, avocado slices, shredded cheese, a dollop of sour cream, and jalapeños, if desired.

Serve: Enjoy your delightful zesty turkey taco lettuce wraps right away as a nutritious and flavorful dinner option!
