2 cups all-purpose flour

1 teaspoon active dry yeast

1 teaspoon sugar

3/4 cup warm water (about 110°F)

1 teaspoon salt

1 tablespoon olive oil

For the Roasted Red Pepper Hummus:

1 cup canned chickpeas, drained and rinsed

1 large roasted red pepper (can be store-bought or homemade)

2 tablespoons tahini

1 garlic clove, minced

2 tablespoons fresh lemon juice

2 tablespoons olive oil

Salt and pepper to taste

Water, as needed for desired consistency

Toppings:

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil leaves, for garnish

Extra olive oil for drizzling

Instructions
 

Prepare the Pizza Dough:

    - In a small bowl, mix together warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, whisk together the flour and salt. Create a well in the center and pour in the yeast mixture along with the olive oil.

        - Stir until a dough begins to form, then transfer it to a floured surface. Knead for 5-7 minutes until the dough is smooth and elastic.

          - Place the kneaded dough into a greased bowl, cover with a clean dish towel, and let it rise in a warm area for approximately 1 hour, or until it has doubled in size.

            Make the Roasted Red Pepper Hummus:

              - In a food processor, combine the drained chickpeas, roasted red pepper, tahini, minced garlic, lemon juice, and olive oil.

                - Blend until the mixture is completely smooth, adding water a tablespoon at a time until you reach your desired consistency.

                  - Season with salt and pepper to taste, then transfer the hummus to a bowl and set it aside.

                    Preheat the Oven:

                      - Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.

                            - Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.

                              - Spread a generous layer of roasted red pepper hummus over the surface of the dough, leaving a small border around the edges for the crust.

                                - Evenly distribute halved cherry tomatoes, chopped Kalamata olives, and crumbled feta cheese over the hummus.

                                  Bake the Pizza:

                                    - Carefully place the assembled pizza in the preheated oven and bake for 15-20 minutes. The pizza is done when the crust is golden brown and the toppings are heated through.

                                      - If desired, drizzle a bit of extra olive oil over the pizza right after removing it from the oven for added richness.
