1 large egg

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/4 cup ice water

1 tablespoon sugar (for sprinkling)

For the Pear Filling:

3-4 medium ripe pears, peeled, cored, and thinly sliced

1 tablespoon lemon juice

1/4 cup brown sugar (adjust according to the sweetness of the pears)

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1 egg (for egg wash)

Instructions
 

Prepare the Almond Cream:

        Make the Galette Dough:

          - In a large mixing bowl, whisk together the all-purpose flour and salt until well combined. Incorporate the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces.

            - Gradually add the ice water, one tablespoon at a time, mixing gently until the dough begins to come together. Be careful not to overwork the dough.

                                Bake:
