1 pound Italian sausage (choose sweet or spicy based on your preference), cut into 1-inch pieces

2 tablespoons olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 can (14.5 oz) diced tomatoes (including juice)

1/4 cup fresh parsley, chopped (for garnish)

Crusty bread or cooked pasta (for serving)

Heat the Skillet: In a large skillet, add the olive oil and place it over medium heat. Once the oil is shimmering, carefully add the sausage pieces. Cook them, stirring occasionally, for about 5-7 minutes or until they are nicely browned on all sides.

    Add Aromatics: Once the sausage is browned, toss in the sliced onions, red bell pepper, and yellow bell pepper. Stir the mixture occasionally and sauté for approximately 5 minutes, or until the vegetables have softened and the onions are translucent.

      Stir in Garlic & Herbs: Add the minced garlic, dried oregano, and dried basil to the skillet. Season the contents with salt and pepper to taste, stirring everything together. Continue to cook for an additional 1-2 minutes until the garlic is fragrant and aromatic.

        Incorporate Tomatoes: Pour the can of diced tomatoes, along with their juice, into the skillet. Stir well to combine all the ingredients, then bring the mixture to a gentle simmer. Allow it to cook for an additional 10-15 minutes, which will help meld the flavors together and thicken the sauce slightly.
