4 breakfast sausages (links or crumbled)

2 large russet potatoes, diced into small cubes

1 small onion, finely chopped

1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

4 large eggs

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: 1/2 cup shredded cheese (cheddar or mozzarella)

Prep the Vegetables: Begin by washing and thoroughly dicing the russet potatoes into small cubes. Finely chop the onion and dice the red bell pepper. Roughly chop the fresh spinach and set all the ingredients aside.

    Cook the Potatoes: In a large, heavy-bottomed skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is hot, add the diced potatoes. Season them with salt, pepper, garlic powder, and smoked paprika. Sauté the potatoes for about 10-12 minutes, stirring occasionally, until they are golden brown and tender when pierced with a fork.

      Add Sausage & Veggies: Once the potatoes are cooked, push them to one side of the skillet. Add the remaining tablespoon of olive oil to the cleared space, then add the sausages. If using sausage links, slice them into rounds; if crumbled, simply add them directly into the skillet. Cook the sausage for 5-7 minutes or until nicely browned. Next, add the chopped onion and red bell pepper to the skillet, mixing everything together. Sauté until the onion is translucent and the bell pepper is tender, approximately 3-4 minutes.

        Incorporate the Spinach: Stir in the chopped spinach and cook for an additional 1-2 minutes, or until the spinach has wilted. Ensure all ingredients are well mixed and heated through.

          Cook the Eggs: Create 4 small wells in the mixture using a spatula and crack one egg into each well. If desired, sprinkle a pinch of salt and pepper over the eggs. Cover the skillet with a lid and cook for 5-6 minutes, or until the egg whites are set but the yolks remain runny. Adjust cooking time if you prefer firmer yolks.
